Crumbed Macadamia Nut Oysters

Woody Island Oysters

1⁄4 cup macadamia nuts coarsely chopped

120g breadcrumbs

2 eggs

100ml milk

1⁄2 cup plain flour

12 freshly shucked Woody Island Oysters

Mayonnaise with a good spoon of Dijon mustard mix together - to serve

 

Beat eggs and milk, season with salt and pepper. Dust Oysters with flour shake off the excess. Combine macadamia nuts and breadcrumbs. Drop each oyster into the egg mixture, then coat well in the crumb mixture. Fry at 180o Celsius for 1 minute. Drain well, top with spoon of mayonnaise mixture.
